MODERN TRENDS IN THE DEVELOPMENT OF BUTTER PRODUCTION IN CONDITIONS OF UNCERTAINTY IN INDUSTRIAL MILK PROCESSING

The article analyzes the dynamics and state of milk production in Russia, as well as the conditions and possibilities of its processing for the production of butter. The assortment structure of butter is given in terms of the physical volume of production by the years of the analyzed period from 2019 to 2023. The authors provide a comparative assessment of the dynamics of butter production in terms of: assortment positions of the commodity structure; Russian regions that provide the maximum contribution to the development of the milk processing industry.

The analysis and assessment of the dynamics of milk and butter production in the context of data from the All-Russian Classifier of Economic Activities is aimed at identifying the causes and factors of ensuring the sustainability of the development of the dairy industry.

The relevance of the study is the investigation of the causes and conditions of changes in butter production volumes within the uncertainty of data on the availability and movement of raw milk, a shortage of production capacity and other productive forces for the manufacture of expensive dairy products.

The purpose is to investigate the state of butter production and identify trends in the effectiveness of the dairy industry.

The objectives of the research are: to study trends in the current state and development of butter production in the Russian Federation; to analyze the structure of marketable products in the organization of milk processing in the subjects.

Research methods: construction of dynamic series reflecting changes in the production and sale of milk and butter in the long-term retrospect in the period from 2017 to 2023; scientific generalization, observation and systematization of the facts of economic activity describing the state of investment activity of economic entities in the market of milk and butter.
